Apple or Pear Galette

Ingredients:

Crust:
1 cup all-purpose flour
1 1/2 tbsp sugar
1/8 tsp salt
6 tbsp unsalted butter, cut into 1/2 inch cubes (needs to be ice cold)
1 large egg yolk (save the white for the crust)
1 1/2 tbsp water

Filling:
2 firm/ripe Bosc pears or 2 Golden Delicious apples, peeled, quartered, cored and cut into 1/2 inch thick slices
1 1/2 tbsp chopped ginger
3 tbsp sugar
1 tbsp all-purpose flour
1 tbsp fresh lemon juice
1/4 tsp ground cinnamon
1 large egg white, beaten
1 tbsp whipping cream

Directions:

Position rack in the lower third of the oven and preheat to 400 degrees.

For the crust:

  1. Mix flour, sugar and salt in the food processor. Using on/off turns, pulse until the mixture resembles coarse meal. Transfer to large bowl. Mix yolk and water in small bowl. Using fork, add enough yolk mixture into flour to form moist clumps. (the above, I do all in the food processor). Gather dough into a flat disc. Wrap in plastic and refrigerate while preparing pears/apples.

For the filling:

  1. Toss pears/apples, ginger, sugar, flour, lemon juice and cinnamon in large bowl. (can add 5-spice powder instead of cinnamon)

  2. Roll out dough on lightly floured surface to a 10 inch round. Overlap pears/apples atop dough, leaving a 2” border. Fold dough border loosely over fruit, pleating and pinching to seal any cracks. Brush dough with egg white. Drizzle cream over filling.

  3. Bake until the crust is golden and the filling bubbles, about 40 minutes. Transfer baking sheet to a rack to cool slightly. Serve warm or at room temperature.

Bishop Strawberry Pie from "Kissin Kuzzin" Gina Bacon

Ingredients:

Crust
1 1/2 cup flour
2 tbsp sugar
Pinch salt
1/2 cup shortening
2 tbsp milk

Filling
2 tbsp corn syrup
3 1/2 tbsp corn starch
1 cup water
Add 1/2 small box of strawberry Jell-O
Add 1 quart FRESH strawberries

Directions:

Crust

Press into a greased glass pie dish. Bake at 350 degrees for 15-20 minutes.

Filling

  1. Cook corn syrup, corn starch and water until thick & clear, approximately 4 minutes
  2. Add Jell-O and fresh strawberries
  3. Mix carefully & pour into crust. Top with whipping cream.

JD’S Carrot Cake

Ingredients:

Cake
4 eggs
2 cup sugar
1 1/2 cup salad oil
2 cup flour
1 tsp salt
2 tsp baking soda
3 tsp cinnamon
3 cup grated carrots

Frosting
8 oz cream cheese
2 ounce butter
11 ounce powdered sugar
1 tsp vanilla

Directions:

Cake

  1. Preheat oven to 350 degrees.
  2. Beat together the eggs, sugar & salad oil until thoroughly mixed.
  3. In a separate bowl combine the remaining dry ingredients.
  4. Add the dry ingredients to the eggs, mix until completely blended
  5. Stir in grated carrots
  6. Pour batter into your favorite cake pan, bake at 350 degree until done.  Baking times vary depending on the type of pan used.

Frosting

  1. Mix all of the frosting ingredients until smooth.
  2. Spread on the sides and on top of the cake.
  3. Top with chopped walnuts (optional).

Summer Shortcake

Ingredients:

1/2 cup shortening
3/4 cup sugar
2 eggs
1 1/2 cup pastry flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk

Directions:
  1. Preheat oven to 375 degrees.
  2. With a mixer cream shortening then slowly add sugar.
  3. Separate the eggs yolks from the egg whites place in separate bowls.  Beat the yolks until creamy then add to the shortening & sugar mix well. 
  4. Sift flour, baking powder & salt together. Add dry ingredients and Milk alternately. 
  5. Beat egg whites until stiff & fold into mixture. 
  6. Pour the batter into well-greased muffin tins & bake at 375 degrees for about 20 minutes.
  7. Place the shortcake on a cooling rack.

  8. Slice the shortcakes in half adding your favorite berry’s and fresh whip cream.

Neiman Marcus Cookie Recipe

Ingredients:

2 cup butter
4 cup flour
2 tsp soda
2 cup sugar
5 cup blended oatmeal
24 ounce chocolate chips
2 cup brown sugar
1 tsp salt
1 8 ounce Hershey Chocolate Bar (Grated)
4 eggs
2 tsp baking powder
2 tsp vanilla
3 cup chopped nuts

Directions:
  1. Measure oatmeal and blend in a blender to a fine powder.
  2. Cream the butter, and both sugars.
  3. Add Eggs and vanilla.
  4. Mix together with flour, oatmeal, salt, baking powder and soda.
  5. Add chocolate chips, Hershey bar and nuts.
  6. Roll into balls and place 2 inches apart. Bake for 10 minutes and 375 Degrees.

Blueberry Delight

Ingredients:

1 cup flour
1/2 cup softened margarine
1 cup finely chopped pecans
8 oz. cream cheese
1 cup powdered sugar
16 oz. Cool Whip
2 packages of 6 oz. instant vanilla pudding
3 cups milk
2 cups blueberries, fresh or frozen (thawed)

Directions:
  1. Layer 1:
    Crumble together flour, margarine, finely chopped pecans. Press into bottom of 9x13 baking pan. Bake at 350 for 20 minutes (edges should be barely brown). Cool.
  2. Layer 2:
    Cream together cream cheese powdered sugar. Fold in 8 oz. Cool Whip. Spread on cooled crust.
  3. Layer 3:
    Mix together instant vanilla pudding and 3 cups milk until thickened. Fold in 2 cups blueberries, spread on top. Chill until firm.
  4. Layer 4:
    Top with 8 oz. Cool Whip. Garnish with blueberries/chopped pecans. Chill.

Carmel Brownies

Ingredients:

1 box German Chocolate cake MIX
1/2 cup butter, melted
1/3 cup evaporated milk
1 cup chopped nuts
1 package (50) caramels
1/3 cup evaporated milk
6 oz. chocolate chips (I recommend less since it's already so sweet

Directions:

Bake in a greased 9x13" baking pan. (I used a spring form pan)

Crust: 350 degrees for 7-10 min
Assembled brownies: 375 degrees for 12-15 min

  1. Mix together cake mix, butter, 1/3 cup evaporated milk and the nuts
  2. Divide batter in half and press one half of mixture into pan
  3. Bake
  4. While baking, melt together caramels and 1/3 cup evaporated milk
  5. Pour over crust
  6. Layer chocolate chips over caramel and crumble remaining cake mixture on top
  7. Return to oven
  8. Bake

Note: These freeze great. Serve at room temp

Cherry Cheesecake Cupcakes

Ingredients:

2 8oz Cream cheese - softened
3/4 cup sugar
2 eggs
1 tsp lemon juice
1 tsp vanilla
1 can of cherry pie filling

Directions:
  1. Whip cream cheese until fluffy.

  2. Blend all the other ingredients to it.

  3. Put a vanilla wafer in the bottom of a cupcake holder.

  4. Fill the holder 2/3 full with the filling.

  5. Bake 15 minutes at 350.

  6. When cool, spoon cherry pie filling on top of each cupcake.

Chocolate Chip and Oatmeal Quick bread

Ingredients:

2 cups all purpose flour
1 cup rolled oats
1/2 cup granulated sugar
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (miniature if you can find them)
1 1/2 cups buttermilk
2 large eggs
1/4 cup  melted butter

Directions:
  1. In a large bowl, mix the following:
    2 cups all purpose flour
    1 cup rolled oats
    1/2 cup granulated sugar
    1/2 cup brown sugar
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1/2 cup chopped walnuts (optional)
    1/2 cup chocolate chips (miniature if you can find them)

  2. In a small bowl, beat:
    1 1/2 cups buttermilk
    2 large eggs
    1/4 cup  melted butter

  3. Stir wet mixture into dry ingredients just until evenly moistened (batter will be lumpy)
  4. Scrape into a buttered and floured 9 x 5 inch loaf pan, and bake in a 350 degree oven until a wooden skewer inserted in the center comes out clean, about 50 minutes.
